Every Wednesday I will feature a "recipe of the week". Being that we are a large family, I need easy yet tasty recipes that I can put my own little twist on, so many of our dinners are semi-homemade. Perfect for all us busy mamas who don't have hours to slave over a hot stove. Also, you will find that I don't cook red meat that often, as our family prefers healthier options, such as turkey and chicken. And yes, we have "cheat days" here and there! Many of my recipes can be altered to your perfection.
BAKED PESTO CHICKEN
Ingredients: Thinly Sliced Chicken Breasts, Jar of Pesto Sauce, 1 bag shredded mozzarella cheese, Pepper.
Directions: Preheat oven to 400 Degrees while you prepare chicken. Spread half of the jar pesto in a glass baking dish. Evenly place each chicken breast strip on the bottom of your baking dish. Drop a spoonful of remaining pesto on each piece and then evenly spread it on the chicken. Cover with foil and then bake for 20 minutes. Remove from oven and set oven on broil. Remove foil and top chicken with bag of cheese(amount depends on your preference, but i usually use the whole bag. I put the extra cheese on top of the pesto, so I can serve the leftover cheesy pesto on top of rice). Here's the part where you're going to have to be very careful. Do not burn the cheese while in the broiler. Be sure to check it often because in no time it will be broiled to perfection!
